One of our favorite events to go to each year is EPCOT’s International Food & Wine Festival. It is so fun walking around and getting to try food and drinks from all over the world. It’s been especially great because each year it seems like Disney adds more and more healthier options, which is great for us! This awesome snack was inspired by a trip to Disney’s Food & Wine Festival at EPCOT.
This recipe is our version of the Loaded Greek “Nachos” that were served at the Greece pavilion in 2017. The dish that was served at EPCOT was one of the few that is 100% vegan with no modifications needed. It is made of: pita chips, vegan sausage crumbles, lettuce, tomato, onion, olives, tofu feta and tzatziki sauce. Needless to say, it was one of our favorite things we had at Food & Wine. (Please bring it back this year!) We wanted to make our own version to have at home as a snack. It actually is pretty easy to make. The tzatziki sauce is the most time consuming part, but it is so worth it!
Vegan Greek Nachos Recipe
- Pita Chips
- Meatless Crumbles
- Vegan Tzatziki Sauce
You can use store bought pita chips or make your own. An easy way to make your own is to use rice paper, cut into triangles and bake.
You can use store bought or make your own:
- 1 block firm tofu, drained
- 2 teaspoons garlic powder
- 2 tablespoons lemon juice
- 2 teaspoons apple cider vinegar
- 2 teaspoon dried dill
- 1 cucumber
- Blend all ingredients but the cucumber until smooth.
- Slice the cucumber and remove the seeds. Cut the cucumber into discs or grate it and then add to the blender or food processor until fully incorporated.
Arrange your chips, spread the crumbles and top with tzatziki. Easy and very healthy snack!
