Peanut Noodles a la Kona Café
After a wonderful Labor Day Weekend at the Polynesian Village, I wanted to recreate my favorite meal from the Kona Café, the Pan Asian Noodles. This is one of my favorite dishes at Disney. It is perfect for the Hawaiian vibe and a somewhat healthier option.
Traveling Gals Tip: If you like the Pan Asian Noodles in Kona Café, Captain Hook’s downstairs offers the Pho Noodle Bowl which is similar for a lower price and offers the Pan Asian Noodles as a side in the cooler for an even much lower price! It is fun to get take out at Captain Cook’s and eat outside.
In searching for an easy vegan recipe, I put together bits and pieces of recipes and ingredients already in my kitchen that do not recreate the Pan Asian Noodles, but have a similar taste.
Peanut Noodles Recipe
- Soba Noodles or noodle of your choice (I used Brown Rice Pasta and Corn Pasta for the youngest gal)
- ¼ cup of peanut butter
- ¼ cup of water + more if needed
- Garlic powder to taste
- Sea Salt to taste
- Chili powder to taste
- Cherry Tomatoes
- Green Onions
This turned out to be very easy. I boiled the noodles. While they were boiling, I whisked together the peanut butter, water and seasonings. After the noodles were drained, tossed them in the peanut sauce and added the cherry tomatoes and green onions. It was great! Since I had been at the local farmer’s market in the morning, I picked up fresh ears of corn and served them together.
