Vegan Greek Nachos

One of our favorite events to go to each year is EPCOT’s International Food & Wine Festival. It is so fun walking around and getting to try food and drinks from all over the world. It’s been especially great because each year it seems like Disney adds more and more healthier options, which is great for us! This awesome snack was inspired by a trip to Disney’s Food & Wine Festival at EPCOT.

This recipe is our version of the Loaded Greek “Nachos” that were served at the Greece pavilion in 2017. The dish that was served at EPCOT was one of the few that is 100% vegan with no modifications needed. It is made of: pita chips, vegan sausage crumbles, lettuce, tomato, onion, olives, tofu feta and tzatziki sauce. Needless to say, it was one of our favorite things we had at Food & Wine. (Please bring it back this year!) We wanted to make our own version to have at home as a snack. It actually is pretty easy to make. The tzatziki sauce is the most time consuming part, but it is so worth it!

Caribbean Cruise on Freedom of the Seas

A couple weeks ago we did an 8 day Caribbean cruise on Freedom of the Seas! It’s a really nice ship with a lot to do, but not too big or overwhelming. We really enjoyed our time aboard. This was more of a relaxing cruise for us as opposed to adventurous, but there are plenty of fun things to enjoy no matter what you are looking to do!
