Brown Rice and Lentil Stuffed Tomatoes
This stuffed tomatoes recipe uses brown rice and lentils making it super healthy. It is delicious, easy to make, and can be used as the main course or as an appetizer. It is certainly filling enough to have for dinner!
- 1½ cups cooked brown rice
- 1½ cups cooked lentils
- ½ cup vegetable broth
- 1 onion, diced
- 5-6 large tomatoes
- Fresh oregano, to taste
- Garlic Powder, to taste
Preheat the oven to 400 degrees. Cut off the tops of the tomatoes and remove the inside with a spoon. You can dice the inside and tops and set aside for later. Sautee the onions until they are brown for about 5 minutes or so. In a large pot, combine the cooked brown rice, cooked lentils, vegetable broth, onion, diced tomato, oregano and garlic. Let simmer for 5-10 minutes for the ingredients to come together.
Stuff tomato shells with rice mixture. Oven bake for about 15 minutes or until the tomatoes are soft and the tops are slightly browned.
This is a great dish to make ahead and store covered in the refrigerator until ready to bake. You can also substitute any grain you have available. You can also use small, Campari tomatoes and convert this dish into an appetizer.
