Broccoli and Jicama Rice

Cauliflower rice has been such a phenomenon over the past couple years and unfortunately, I just cannot stand eating Cauliflower.  It is disappointing since I love the idea of a healthier version of rice.  After searching around, I found Jicama rice as an alternative but it was not exactly great on its own.  At the suggestion of my local grocer, I tried Broccoli rice and it is good, but too similar to salad.  This prompted me to mix the 2 together and I love it!

What You Need:

  • 1 Broccoli Crown
  • 1 Medium Jicama
  • Food processor or Vitamix

For the Broccoli Crown: Chop it into small chunks, including the stems and everything.  Put it into the food processor or Vita Mix a little at a time until it has a consistency similar to rice.

For the Jicama:  Peel the Jicama by taking a sharp knife and slicing the skin.  Once you slice a bit of the skin it is easy to just peel it off.  Then you chop the Jicama into chunks.   Put it into the food processor or Vita Mix a little at a time until it has a consistency similar to rice.

It is important that you don’t over process the broccoli and jicama. When it’s overly chopped, it doesn’t give you the same texture and consistency as rice. I continuously pulse the Vita Mix and taste test until it’s the right consistency.

Then combine the broccoli and jicama rice together and enjoy!



Suggested Toppings:

  • Vegan Queso
  • Salad Dressing
  • Pasta Sauce
  • Soy Sauce/Peanut Sauce
  • Everything But The Bagel seasoning from Trader Joe’s (we put this on pretty much everything now.)
