Pumpkin season is upon us! Although it certainly doesn’t feel like fall here in Florida, we still enjoy the change of seasons. By now you have probably seen a lot about pumpkin spice. We wanted a quick and easy way to add pumpkin to a meal, and decided to add it to rice! If you love pumpkin, this is a great way to get your pumpkin fix.
Autumn Pumpkin Rice Recipe
- Brown Rice
- 1 cup canned pumpkin
- 1 ½ tbsp. apple cider vinegar
- 1 small onion
- 2 tbsp raisins
- ½ cup walnuts
This is perhaps one of the easiest and most flavorful recipes for fall! You prepare the brown rice and then just add all the additional ingredients and stir together. These are just the ingredients I had on hand, but you could add anything you prefer: apple chunks, zucchini, squash, eggplant, sweet potato. We served the rice as a side to vegan meatloaf paired with pinot noir. If you added ingredients to the rice you could turn it into a stand-alone entrée.
